Last weekend I took a cupcake class at Butter Lane (take a minute to visit their site if only for the lovely music). What better way to spend a lovely Saturday than frosting, baking and eating cupcakes! The regular classes are listed on the site for $60 but I got mine through Groupon for only $29. (Total steal!)
During the two hour class, a Butter Lane Cupcake Pro teaches how to make 3 different cupcakes and icings. We made vanilla, chocolate and banana cupcakes with vanilla bean, chocolate and cream cheese frosting. With all that butter and an ever watchful instructor, we managed to make some delicious creations. Every bakery has their own way of doing things, but I really like Butter Lane cupcakes because I find them to be the perfect mix of cake and icing, neither overpowering the other. The cake is moist and flavorful but strong enough to hold its own against the rich, creamy frosting. The frosting is very sweet and whether you’re trying chocolate or strawberry, the chosen flavor is both fragrant and delicious.
I was disappointed that the class didn’t teach both American buttercream and French buttercream since they offer both in their bakery. Truly this is a great class for beginners who want to learn how to make cupcakes, but not a really great fit if you’re already experienced in this area, which is why I didn’t enjoy it as much as I had hoped.
Since I’m always trying to perfect my icing technique, I was really looking forward to that part of the class and it did not disappoint. The instructor taught us some great tricks on how to decorate your cupcakes in a simple but elegant way. In addition, she taught us how to use basic icings like vanilla and chocolate to create more elaborate flavors by adding various extracts, fruit jams and nuts.
I loved the way my cupcakes turned out and to top it all off, the class ended up making far too many of them, so we each got to take home a box of 20 … yes they were gone in 2 days.
Whether you’re looking for a delicious cupcake on the go, or want to learn how to make your own version of it Butter Lane is a great spot. I should also mention that they offer these classes for kids, so you can spend a good amount of time watching your children play and bake around.
