Vegetable Quiche

My co-worker shared a delicious and easy quiche recipe with me the other day. I decided to make it last night and it turned out insanely good… so good in fact that I was told to “quit my job and be a cook.” I think that was a mighty good compliment =) 

Recipe: 

2 eggs

3 tbsp cream

1/2 cup chopped spinach ( i used frozen)

1 medium sized zucchini, sliced

a few pieces of cut up ham 

feta cheese (as much as you want) 

Salt to taste (not too much since feta is already salty enough) 

1/2 cup of shredded mozzarella cheese

1 baked piecrust (you can make your own or just buy one for $2.00. I accidentally bought the sweet butter one but it ended up tasting delicious. I love the combination of sweet and salty. If you’re not a fan, just make sure you buy the plain piecrust)  

Directions

Preheat oven at 375°F. Mix all your ingredients together in a bowl. Pour the mixture in the pie crust. Bake at 375°F until center is almost set, about 30 minutes. Take it out and sprinkle with shredded mozzarella cheese. Put it back in the oven for another 5-10 minutes, until the cheese is fully melted. Let stand for 10 minutes and then cut into wedges. 

FYI: Tastes even better the next day.

Quiches are so easy to make and always end up tasting like something that took a lot of effort and talent, when in fact you don’t need much of either. You can create so many different ones using your favorite veggies, meats or cheeses. You can also use low-fat ingredients to make this a healthier dish.
